Harvest Details

Castel di Lego ORO is grown at 500–600 meters on limestone-rich, calcareous soil in Ferla, farmed as a single-variety monoculture.

The fruit is 100% Tonda Iblea, the defining heritage cultivar of the Monti Iblei area; grown at this higher altitude, it develops the sharper, more structured character that sets this bottling apart from Soliva's other Tonda Iblea oils.

Olives are hand-picked and gathered with gentle mechanical facilitators during veraison to maximize aromatic intensity, then transported immediately to the mill for cold, continuous extraction with brief malaxation and filtration.

Storage & Care

Store your olive oil in a cool, dark place away from heat and direct sunlight, and keep the bottle tightly sealed between uses.

Unopened bottles stay at their best for roughly two years, but once opened, the freshest flavor and aroma are enjoyed within a few months.

If you prefer using a cruet, choose a dark, airtight one and refill it with small amounts at a time to protect the oil from light and air.

Shipping & Returns

Shipping
Free ground shipping on U.S. orders over $100. Orders below $100 ship at standard carrier rates. Most orders ship within 2–3 business days, and tracking is provided once your package is on its way.

Aroma

Green and vivid with crisp fresh‑cut grass, green tomato vine, and a faint wild herb edge. The nose leans more vegetal and vertical than fruity, shaped by higher‑altitude Nocellara that naturally produces sharper, more structured aromatics.

Taste

Firm and energetic from the start, with a clean bitterness that unfolds into green tomato, leafy herbs, and a decisive pepper snap on the finish. The palate is bright, assertive, and built for dishes that welcome structure.

FAQ

What makes Soliva's olive oils different from what I'd find at the grocery store?

Every oil we carry comes from one named estate, one harvest, one press. That’s different from most supermarket "extra virgin," which is blended from oil sourced across dozens of unnamed farms. We work directly with four small Sicilian producers: Tenuta Cavasecca, Embrace, Frantoio Galioto, and Viragì. Read more about how we choose them in Our Story.

What do "single-estate," "single-cultivar," and labels like D.O.P. or I.G.P. actually mean?

Single-estate means all the olives come from one farm. Single-cultivar (or "monocultivar") means the oil is pressed from just one olive variety rather than a blend, such as our Monocultivar Biancolilla N° 07 or Monocultivar Moresca N° 03. D.O.P. and I.G.P. are EU-protected designations that guarantee the oil was grown and pressed in a specific certified region, such as our D.O.P. Monti Iblei 04 and I.G.P. Sicilia 05.

How do I know this oil is actually fresh?

Look for a harvest date and lab-tested numbers, not just a "best by" date. Sicilian olives are picked between September and November, so a harvest labeled "2025-2026" comes from olives picked in late 2025 and sold as that year’s vintage through the following year. Every bottle we sell is tested for polyphenol content and free acidity after pressing, and we publish those results as we receive them from each producer. Once it arrives, keep it tightly capped in a cool, dark place away from the stove; light and heat age olive oil fastest.

"Mild," "medium," and "intense": what do these mean, and how do I pick?

It’s a measure of pungency and peppery bite at the back of the throat, not a measure of quality. A mild oil isn’t a "weaker" oil. If you’re easing in, start with Delicato: The Gentle Introduction. For an everyday all-rounder, browse Equilibrio: The Everyday Classics. If you already love a peppery finish, go straight to Audace: For the Bold Palate.

I'm new to single-estate olive oil. Where should I start?

Start with a bundle rather than committing to a full bottle blind. Primo Assaggio pairs two 250ml bottles so you can taste the contrast side by side. La Scoperta walks you from mild to intense across three 500ml bottles.

Can I cook with these oils, or are they only for finishing?

Yes, all of our oils can be cooked with, though their character comes through most at the table: drizzled, dipped, or spooned over something simple. A general rule of thumb: milder oils are the most versatile for everyday cooking, while a bolder, more intense oil is best saved for finishing so its flavor isn’t lost to heat.

What are polyphenols, and why should I care?

Polyphenols are the natural antioxidant compounds responsible for both an oil’s peppery bite and much of its wellness appeal. Higher polyphenol counts generally mean a fresher, more recently pressed oil. We test and publish polyphenol levels for every harvest. Learn more on our Health Benefits page.

I want to send this as a gift. What do you recommend for someone who doesn't know olive oil yet?

A bundle takes the guesswork out of gifting. Primo Assaggio and La Scoperta are both built for someone new. For something more open-ended, a Soliva Gift Card lets them choose their own oil.

What's the difference between shopping by producer and shopping a bundle?

Shop by producer if you already know whose oil you want: Tenuta Cavasecca, Embrace, Frantoio Galioto, or Viragì. Shop a bundle if you’d rather we do the choosing across estates: Primo Assaggio, La Scoperta, or Le Quattro Tenute. Or browse everything at once in Shop All.
