Herb-Marinated Olives

Ingredients

  • 2 cups mixed olives
  • 1/2 cup Castel di Lego ORO
  • 3 cloves garlic, smashed
  • Zest of 1 lemon
  • 2 sprigs fresh rosemary or thyme
  • 1/2 teaspoon red pepper flakes

Instructions

  1. In a clean jar, combine the olives, smashed garlic, lemon zest, herb sprigs, and red pepper flakes.
  2. Pour Castel di Lego ORO over the top, making sure the olives and aromatics are fully submerged, topping off with a bit more oil if needed.
  3. Seal the jar and refrigerate at least 1 day, ideally 2, to let the flavors fully infuse, the olives will taste noticeably better the longer they sit, up to a week is fine.
  4. About 30 minutes before serving, remove the jar from the fridge and let the olives come to room temperature, this keeps the oil from being solidified and cloudy.
  5. Give the jar a gentle shake or stir, then transfer to a serving bowl and serve with the herb sprigs still tucked in for presentation.
