Lemon Herb Rice Pilaf

Ingredients

  • 1 1/2 cups long-grain rice
  • 3 tablespoons EVOSÌ
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 2 1/2 cups chicken or vegetable broth
  • Zest and juice of 1 lemon
  • 1/4 cup fresh dill and parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Heat EVOSÌ in a saucepan over medium heat, then add the diced onion and garlic and sauté until softened, about 4 minutes.
  2. Add the rice to the pan and toast, stirring constantly, for 2 minutes, until the grains turn slightly translucent at the edges.
  3. Pour in the broth and bring to a boil, then reduce the heat to low, cover, and simmer 18 minutes, without lifting the lid, until the liquid is fully absorbed.
  4. Remove the pan from heat and let it rest, still covered, for 5 minutes, this lets the rice finish steaming.
  5. Fluff the rice with a fork, then stir in the lemon zest, lemon juice, dill, and parsley.
  6. Season with salt and pepper to taste and serve warm.
