Steamed Asparagus with Almond Drizzle

Steamed asparagus with almond drizzle needs almost nothing to be good: four minutes in the steamer, toasted almonds, a finishing drizzle of oil. Moresca N°03's clean, almond-tinged structure stands in for butter without losing anything.

Ingredients

  • 1 bunch asparagus, trimmed
  • 3 tablespoons Moresca N°03
  • 1/4 cup sliced almonds, toasted
  • Zest of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Trim the woody ends from the asparagus spears.
  2. Set up a steamer basket over an inch or two of simmering water, or bring a pot of water to a boil for blanching.
  3. Steam the asparagus 4 to 5 minutes, until bright green and just tender when pierced with a knife, don't walk away, it goes from perfect to overcooked quickly.
  4. Transfer immediately to a serving plate.
  5. Drizzle generously with Moresca N°03 in place of butter, letting it pool slightly at the base.
  6. Top with the toasted almonds and lemon zest, and season with salt and pepper.
  7. Serve warm or at room temperature.
