Ingredients

  • 2 cups almond flour
  • 1 cup granulated sugar
  • 2 large egg whites
  • 1/2 teaspoon almond extract
  • Pinch of salt
  • 1 tablespoon Embrace
  • Powdered sugar, for rolling

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk the egg whites until foamy and slightly thickened, about 1 minute by hand.
  3. Whisk in the granulated sugar, almond extract, salt, and Embrace until the mixture is smooth.
  4. Add the almond flour and fold it in with a spatula just until a soft, sticky dough comes together. Don't overmix.
  5. Let the dough rest 5 minutes so the almond flour can absorb some moisture, which makes it easier to handle.
  6. Scoop and roll the dough into 1-inch balls, lightly dust your hands with powdered sugar if it's sticking.
  7. Roll each ball generously in powdered sugar until fully coated, then place on the baking sheet about 2 inches apart.
  8. Bake 18 to 20 minutes, until the cookies have spread slightly, cracked on top, and turned light golden at the edges.
  9. Cool the cookies on the baking sheet for 10 minutes before transferring to a rack, they're fragile while warm and firm up as they cool.
