Shrimp Scampi Pasta
Shrimp scampi pasta is genuinely a thirty-minute meal: garlic, white wine, lemon, and pasta, ready in the time it takes the water to boil. SBEZI's herb-forward oil was made for a dish where garlic and good oil are most of the point.
Ingredients
- 12 ounces linguine or spaghetti
- 1 pound large shrimp, peeled and deveined
- 1/3 cup SBEZI, divided
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- Juice of 1 lemon
- 1/4 teaspoon red pepper flakes
- 1/4 cup fresh parsley, chopped
- Salt and pepper, to taste
Instructions
- Bring a large pot of well-salted water to a boil and cook the pasta until al dente, according to package directions. Reserve 1/2 cup pasta water before draining.
- While the pasta cooks, heat half the SBEZI in a large skillet over medium-high heat. Season the shrimp with salt and pepper and cook 1 to 2 minutes per side, until just pink and opaque, then remove to a plate, they'll finish cooking later.
- Add the remaining SBEZI and garlic to the same pan and cook about 30 seconds, until fragrant, then deglaze with the white wine and lemon juice, scraping up any browned bits.
- Simmer 2 minutes to let the sauce reduce slightly, then return the shrimp to the pan along with the drained pasta and red pepper flakes.
- Toss everything together over medium heat, adding splashes of the reserved pasta water as needed until the sauce coats the pasta and turns glossy.
- Finish with fresh parsley and serve immediately.
