Classic Bruschetta al Pomodoro

Bruschetta al pomodoro is the original test of a good olive oil: ripe tomato, basil, garlic, and grilled bread, with nothing to hide behind. Siracusana Zaituna, our boldest bottle, is built for exactly this job.

Ingredients

  • 4 ripe tomatoes, diced
  • 1 clove garlic, minced, plus 1 clove for rubbing
  • 1/4 cup fresh basil, torn
  • 1/4 cup Siracusana Zaituna, plus more for the bread
  • Salt, to taste
  • 1 baguette or Italian loaf, sliced and toasted

Instructions

  1. In a bowl, combine the diced tomatoes, minced garlic, torn basil, and Siracusana Zaituna.
  2. Season with salt and toss gently, then let the mixture sit about 10 minutes so the flavors meld and the tomatoes release some of their juice.
  3. Grill or toast the bread slices until golden brown and crisp on both sides.
  4. While the bread is still warm, rub each slice with the cut side of the reserved garlic clove for a subtle, fresh garlic bite.
  5. Brush each slice with a little more Siracusana Zaituna.
  6. Top generously with the tomato mixture, letting some spill over the edges.
  7. Serve immediately, while the bread is still warm and crisp underneath the topping.
