Apple, Almond, and Arugula Salad

This apple, almond, and arugula salad takes fifteen minutes and needs almost nothing beyond peppery greens, crisp apple, and toasted almonds. It's built entirely from Moresca N°03's own tasting notes, so the dressing barely needs anything else.

Ingredients

  • 4 cups arugula
  • 1 apple, thinly sliced
  • 1/4 cup slivered almonds, toasted
  • 1/4 cup shaved Parmesan
  • 3 tablespoons Moresca N°03
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Toss the sliced apple with a little of the lemon juice right away, this keeps it from browning while you prep the rest of the salad.
  2. In a large bowl, combine the arugula, apple slices, and toasted almonds.
  3. In a small bowl, whisk together Moresca N°03, the remaining lemon juice, salt, and pepper until emulsified.
  4. Pour the dressing over the salad and toss gently to coat every leaf.
  5. Divide onto plates and finish with shaved Parmesan just before serving so it doesn't wilt into the greens.
