Apple, Almond, and Arugula Salad
This apple, almond, and arugula salad takes fifteen minutes and needs almost nothing beyond peppery greens, crisp apple, and toasted almonds. It's built entirely from Moresca N°03's own tasting notes, so the dressing barely needs anything else.
Ingredients
- 4 cups arugula
- 1 apple, thinly sliced
- 1/4 cup slivered almonds, toasted
- 1/4 cup shaved Parmesan
- 3 tablespoons Moresca N°03
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions
- Toss the sliced apple with a little of the lemon juice right away, this keeps it from browning while you prep the rest of the salad.
- In a large bowl, combine the arugula, apple slices, and toasted almonds.
- In a small bowl, whisk together Moresca N°03, the remaining lemon juice, salt, and pepper until emulsified.
- Pour the dressing over the salad and toss gently to coat every leaf.
- Divide onto plates and finish with shaved Parmesan just before serving so it doesn't wilt into the greens.
