Warm Cannellini Bean Purée
This warm cannellini bean purée blends simmered beans, garlic, rosemary, and a generous pour of olive oil into something creamy enough to eat with a spoon, no cream required. Biancolilla N°07's own rosemary note carries through the whole pot.
Ingredients
- 3 tablespoons Biancolilla N°07, plus more for serving
- 2 cloves garlic, sliced
- 1 sprig fresh rosemary
- 2 (15-ounce) cans cannellini beans, drained
- 1/2 cup water or broth
- Salt and pepper, to taste
- Lemon juice, to taste
Instructions
- Heat Biancolilla N°07 in a saucepan over medium-low heat, then add the garlic and rosemary sprig and cook gently for about 2 minutes, until fragrant but not browned, lower the heat if the garlic starts to color.
- Add the drained beans and water or broth, stir to combine, and simmer 8 to 10 minutes, stirring occasionally, until the beans are heated through and starting to soften further.
- Remove and discard the rosemary sprig.
- Blend the mixture until smooth using an immersion blender directly in the pot, or carefully transfer to a food processor or blender and puree, adding a splash more water if it's too thick.
- Season with salt, pepper, and a squeeze of lemon juice, tasting as you go.
- Spoon into a serving bowl while warm and finish with a generous final drizzle of Biancolilla N°07.
