Lentil and Herb Salad
Lentil and herb salad is a warm, protein-rich lunch that keeps well for days, a genuinely good option for meal prep. Legumes are one of D.O.P. Monti Iblei 04's named pairings, and its gentle herbal character carries through the whole bowl.
Ingredients
- 1 cup dried green or brown lentils
- 1/3 cup D.O.P. Monti Iblei 04
- 2 tablespoons lemon juice
- 1/4 cup fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1/4 red onion, finely diced
- Salt and pepper, to taste
Instructions
- Rinse the lentils under cold water, picking out any debris, then place in a pot with plenty of water.
- Bring to a simmer and cook 15 to 20 minutes, checking often near the end, until the lentils are tender but still hold their shape, not mushy.
- Drain well and let cool slightly, they should still be warm, not hot.
- While the lentils cook, whisk D.O.P. Monti Iblei 04, lemon juice, salt, and pepper together in a small bowl.
- Toss the warm lentils with the dressing, red onion, parsley, and mint, the residual heat helps the lentils soak up more flavor.
- Serve warm or at room temperature.
