Honey-Glazed Carrots with Herbs

Honey-Glazed Carrots with Herbs

Honey-glazed carrots with herbs roast until the edges caramelize, a classic steakhouse side that pairs naturally with meat-forward mains. I.G.P. Sicilia 05's warm spice character keeps the honey from turning cloying.

Ingredients

  • 1 1/2 pounds carrots, halved lengthwise
  • 3 tablespoons I.G.P. Sicilia 05
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 425°F.
  2. In a large bowl, toss the halved carrots with I.G.P. Sicilia 05, garlic, thyme, salt, and pepper until evenly coated.
  3. Spread the carrots in a single layer on a sheet pan, cut-side down for the best caramelization.
  4. Roast 20 minutes, until the carrots are starting to soften and brown at the edges.
  5. Remove from the oven, drizzle with honey, and toss to coat.
  6. Return to the oven and roast 5 to 8 minutes more, until the carrots are fully tender and deeply caramelized, watching closely near the end since the honey can burn quickly.
  7. Transfer to a serving dish while warm.
