Grilled Chicken Skewers

Grilled chicken skewers cook fast and pack easily, an easy way to get dinner-quality flavor into a weekday lunch. I.G.P. Sicilia 05, our most meat-forward oil, is the natural base for a soy-garlic-ginger marinade.

Ingredients

  • 1 1/2 pounds chicken thighs, cut into cubes
  • 1/3 cup I.G.P. Sicilia 05
  • 3 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey
  • 2 bell peppers, cut into 1 1/2-inch pieces
  • 1 red onion, cut into 1 1/2-inch pieces
  • Wooden or metal skewers

Instructions

  1. In a bowl, whisk together I.G.P. Sicilia 05, soy sauce, garlic, ginger, and honey.
  2. Add the cubed chicken and toss to coat thoroughly, then cover and marinate in the fridge 2 to 4 hours.
  3. While the chicken marinates, cut the bell peppers and red onion into pieces roughly the same size as the chicken cubes, about 1 1/2 inches, so everything cooks evenly.
  4. If using wooden skewers, soak them in water 20 minutes before grilling to keep them from burning.
  5. Thread the skewers by alternating a piece of chicken, then a piece of pepper, then a piece of onion, repeating until the skewer is full, leaving a little space between pieces so everything cooks evenly.
  6. Heat a grill to medium-high heat.
  7. Grill the skewers 10 to 12 minutes, turning every few minutes, until the chicken is charred in spots and cooked through to an internal temperature of 165°F, and the peppers and onion are tender with good char marks.
  8. Remove from the grill and let rest a couple minutes before serving.
