Classic Lemon Bars

Buttery shortbread crust meets tart, custardy filling in these timeless lemon bars. Siracusana Zaituna's bright grapefruit-and-lime edge runs straight into the crust here, not just the filling.

Ingredients

  • 1 1/2 cups all-purpose flour, divided
  • 1/2 cup powdered sugar, plus more for dusting
  • 1/2 cup Siracusana Zaituna
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 2/3 cup fresh lemon juice
  • Zest of 1 lemon

Instructions

  1. Preheat the oven to 350°F and line a 9-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a bowl, mix 1 1/4 cups of the flour, the powdered sugar, and Siracusana Zaituna together with a fork or your hands until it forms a soft, sandy dough.
  3. Press the dough evenly into the bottom of the prepared pan and bake 18 to 20 minutes, until the edges are just turning golden.
  4. While the crust bakes, whisk the eggs, granulated sugar, lemon juice, lemon zest, and the remaining 1/4 cup flour together until smooth.
  5. Pour the lemon filling over the warm crust as soon as it comes out of the oven.
  6. Return the pan to the oven and bake 20 to 22 minutes, until the filling is just set in the center and no longer jiggles when the pan is gently shaken.
  7. Cool the bars completely at room temperature, then refrigerate at least 2 hours before slicing.
  8. Use the parchment overhang to lift the bars out, dust with powdered sugar, and cut into squares.
