Apple, Pine Nut, and Pecorino Salad

Apple, Pine Nut, and Pecorino Salad

This apple, pine nut, and pecorino salad is a fast, savory-sweet lunch built directly from Carusia's own tasting notes before any dressing goes on.

Ingredients

  • 5 cups mixed greens
  • 1 apple, thinly sliced
  • 1/4 cup pine nuts, toasted
  • 1/3 cup shaved pecorino
  • 3 tablespoons Carusia
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Toast the pine nuts in a dry skillet over medium heat 2 to 3 minutes, shaking the pan often and watching closely, they burn quickly once they start to color.
  2. Toss the apple slices with a little of the lemon juice right away to keep them from browning.
  3. In a large bowl, combine the mixed greens, apple slices, and toasted pine nuts.
  4. In a small bowl, whisk Carusia with the remaining lemon juice, salt, and pepper until emulsified.
  5. Pour the dressing over the salad and toss gently, then top with shaved pecorino just before serving.
