New to single-estate olive oil? Start here.

Two bottles from one family estate in Sicily: one gentle, one bold. Taste them side by side and you'll quickly find out which style you love.

  • The gentle one, D.O.P. Monti Iblei N° 04: light, fresh and grassy.
  • The bold one, I.G.P. Sicilia N° 05: golden and fuller, with a peppery kick at the end.

Both are best drizzled over food just before serving. Whichever bottle empties first points you to what's next: our gentler oils or our bolder ones.

What the seals mean: D.O.P. (Protected Designation of Origin) is Italy's strictest olive oil designation, requiring the olives to be grown and pressed within one defined area under strict rules. I.G.P. Sicilia (Protected Geographical Indication) confirms every olive was grown and pressed on the island.

  • Harvest Year: 2025 - 2026
  • Intensity: Light-Medium and Medium-Intense
  • Size: 2 x 500ml
Pair With

D.O.P. Monti Iblei N°04 is light-medium and herbal, good on fish, salads, fresh vegetables, or a finished steak.

I.G.P. Sicilia N°05 is medium-intense with a gentle spice, standing up to roast chicken, grilled red meat, and other dishes that can carry a bolder oil.

Harvest Details

Both oils come from Frantoio Galioto, a family estate in the rocky, limestone-rich hills of Ferla, where every olive is grown, picked, and pressed under the rules of its protected designation.

D.O.P. Monti Iblei N°04 is made from Tonda Iblea and Moresca olives, grown at 500–600 meters and harvested during veraison, as the olives begin to turn from green to purple.

I.G.P. Sicilia N°05 is made from Nocellara del Belice and Biancolilla olives, grown at 300–400 meters and harvested early, during veraison.

Olives are hand-picked and taken straight to the mill for cold, continuous extraction.

Storage & Care

Store your olive oil in a cool, dark place away from heat and direct sunlight, and keep the bottle tightly sealed between uses.

Unopened bottles stay at their best for roughly two years, but once opened, the freshest flavor and aroma are enjoyed within a few months.

If you prefer using a cruet, choose a dark, airtight one and refill it with small amounts at a time to protect the oil from light and air.

Shipping & Returns

FAQ

What makes Soliva's olive oils different from what I'd find at the grocery store?

Every oil in this bundle comes from a named estate, a single harvest, a single press. That’s different from most supermarket "extra virgin," which is blended from oil sourced across dozens of unnamed farms. We work directly with four small Sicilian producers: Tenuta Cavasecca, Embrace, Frantoio Galioto, and Viragì. Read more about how we choose them in Our Story.

What do "single-estate," "single-cultivar," and labels like D.O.P. or I.G.P. actually mean?

Single-estate means all the olives come from one farm. Single-cultivar (or "monocultivar") means the oil is pressed from just one olive variety rather than a blend. D.O.P. (Protected Designation of Origin) is Italy's strictest olive oil designation, requiring the olives to be grown and pressed within one defined area under strict rules. I.G.P. Sicilia (Protected Geographical Indication) confirms every olive was grown and pressed on the island. Both seals are checked by independent certifiers, so the label is a guarantee, not a marketing claim.

How do I know these oils are actually fresh?

Look for a harvest date and lab-tested numbers, not just a "best by" date. Sicilian olives are picked between September and November, so a harvest labeled "2025-2026" comes from olives picked in late 2025 and sold as that year’s vintage through the following year. Every bottle we sell is tested for polyphenol content and free acidity after pressing, and we publish those results as we receive them from each producer. Once your bottles arrive, keep them tightly capped in a cool, dark place away from the stove; light and heat age olive oil fastest.

"Mild," "medium," and "intense": what do these mean?

It’s a measure of pungency and peppery bite at the back of the throat, not a measure of quality. A mild oil isn’t a "weaker" oil. This bundle is built to let you compare across that range in one order; if you’d rather browse by intensity on your own, see Delicato: The Gentle Introduction, Equilibrio: The Everyday Classics, or Audace: For the Bold Palate.

Can I customize which oils are included in this bundle?

No. Il Sigillo is a fixed pair, chosen so the two oils contrast rather than overlap. If you’d rather choose your own, Build Your Own Bundle lets you pick up to six bottles from all of our estates and save up to 15%.

Do the bottles ship together, and is this a subscription?

Yes, all bottles in a bundle are one order and arrive in one shipment. No, this is a one-time purchase, not a recurring charge, and nothing renews automatically.

Can I cook with these oils, or are they only for finishing?

Yes, all of our oils can be cooked with, though their character comes through most at the table: drizzled, dipped, or spooned over something simple. A general rule of thumb: milder oils are the most versatile for everyday cooking, while a bolder, more intense oil is best saved for finishing so its flavor isn’t lost to heat.

What are polyphenols, and why should I care?

Polyphenols are the natural antioxidant compounds responsible for both an oil’s peppery bite and much of its wellness appeal. Higher polyphenol counts generally mean a fresher, more recently pressed oil. We test and publish polyphenol levels for every harvest. Learn more on our Health Benefits page.

I loved one of these oils best. Can I buy a full-size bottle of just that one?

Yes. Both are sold on their own in 500ml bottles: D.O.P. Monti Iblei N° 04 and I.G.P. Sicilia N° 05. To explore more from the same estate, see everything from Frantoio Galioto.
